¿Te tocaron los tamales del 2 de Febrero? Sencilla receta de tamales Ligeros

Te salió el “muñequito” en la rosca de reyes y ahora debes los tamales.? Seguramente te has preguntado por que tenemos que “pagar ” con tamales y no con otro platillo.

Los tamales (del náhuatl “tamalli” que significa envuelto) Estuvieron presentes en las ofrendas a los dioses desde épocas prehispánicas,  porque están hechos de maíz. De este modo al igual que otras tradiciones prehispánicas se combina con  la tradición del 6 de enero, el día en que los Tres Reyes Magos ofrecieron oro, mirra e incienso a  Jesús, las familias mexicanas conmemoran este día con la famosa “rosca de reyes” Por ello quien haya tenido la fortuna de “descubrir” a Jesús simbolizado con un muñequito dentro de la rosca se convierte en el “padrino” del niño y por ello tiene que ofrendar tamales, por el 2 de febrero, día en que se “levanta” al Niño del pesebre para vestirlo y adornarlo y así terminar esta serie de tradiciones que culminan con la Semana Santa.

Existe en la gastronomía mexicana una gran variedad de tamales. El día de hoy te presentamos una receta fácil y diferente pero sobre todo una versión de tamales ligeros, ¡Libres de manteca!  Y totalmente saludables.

 

Ingredientes

  • 1 kg de harina de maíz cacahuazintle o maseca
  • 1 1/2 cda polvo de hornear
  • 1/2 taza de caldo de pollo o de vegetales
  • 1 pizca de sal
  • 250 gr de aceite de coco
  • 1 cdita de cúrcuma
  • 1/4 de taza de bayas goji
  •  150 gr de piloncillo granulado o azúcar mascabado
  • 1 paquete de  hojas para tamales
  • 1/2 de taza de bayas goji
  • 250 gr de queso panela.
  • 1 litro y 350 gr de Agua

 

¡Manos a la obra!

1. En un recipiente suficientemente grande mezcla la harina, el polvo para hornear, la sal, la curcuma y el piloncillo o azúcar mascabado; Desde este momento lava perfectamente las hojas de maíz para tamales y ponlas a remojar en agua para suavizarlas.

2. Incorporar a la mezcla el aceite de coco y comience a amasar añadiendo de a poco el caldo hasta obtener una textura uniforme, el secreto para unos tamales esponjosos esta en batir suficiente la masa, sabrás que la masa ya esta lista si tomas una pequeña bolita y a ponerla en un vaso con agua flota y no se desbarata, una vez que tengamos la masa lista agregamos las bayas goji y mezclamos para incorporarlas.

3. Corta el queso panela en bastones pequeños que servirán de relleno para nuestros tamales, escurre perfectamente las hojas de tamal y pon la vaporera a calentar con suficiente agua.

4. Toma una hoja de maíz y ponle alrededor de dos cucharadas soperas de masa  y coloca un trozo de queso en el centro, cierra con cuidado y dobla la hoja procurando mantener toda la masa en un solo sitio de la hoja, repite esta operación hasta tener listos todos los tamales, una vez listos comienza a colocarlos en la vaporera lo mas juntos posibles para que mantengan la forma, puedes usar las hojas de maíz que te sobraron para rellenar huecos en la vaporera, revisa constantemente el agua de la vaporera si esta por agotarse agrega un poco mas, pasados 45 minutos de cocción puedes revisar si el tamal ya se desprende de la hoja sin problema y sin desbaratarse tus tamales están listos.
